Laboratory for Chemistry and Technology of Fruits, Vegetables and Aromatic Herbs was established in 1958 under the name Laboratory for Fruit and Vegetable Processing Technology. Its establishment followed the introduction of the course of the same name within the then Department of General Food Technology.
Throughout history, the Laboratory has gone through several phases and name changes. With the Statute of 1971, with the introduction of five-year studies, the name was changed to the Laboratory for Preservation Processes and Fruit, Vegetable and Wine Processing. In 1998, the name was shortened to the Laboratory for Preservation Processes and Fruit and Vegetable Processing.
The unit has held its current name, Laboratory for Fruit and Vegetable Chemistry and Technology, since 2020. The Laboratory is currently managed by Associate Professor Ivona Elez Garofulić, PhD.
