Laboratory for Technology of Milk and Milk Products was established in 1960. Throughout the history of the laboratory, teaching and research were led by prominent experts such as Professor Ante Petričić, PhD, Professor Davor Baković, PhD, and Professor Ljubica Tratnik, PhD, who was Head of Laboratory from 1992 to 2011. After her, the position of Head was held from 2011 to 2021 by Professor Rajka Božanić, PhD.
Today, the laboratory is managed by Associate Professor Katarina Lisak Jakopović, PhD, who has been a member of the Laboratory since 2009 and has held the position of Head since 2021. The basic activity of the unit is the education of students at all levels of study, along with continuous scientific research activity focused on dairy issues.
The scientific work of the Laboratory covers a wide range of topics, from membrane filtrations and fermentations of different types of milk to contemporary research on whey beverages and the application of plant extracts in cheese production. Special emphasis is placed on optimizing plant-based beverages, the influence of heat treatments on donkey and mare milk, and the development of innovative products with alternative salts and edible films.
