Laboratory for Fermentation and Yeast Technology was established in 1957 under the name Laboratory for Fermentation Technology. Throughout its history, it also included biological wastewater treatment, and since 1997 it has been operating as an independent unit within the Department of Food Technology Engineering.

The teaching activity under the leadership of Professor Jasna Mrvčić, PhD includes key courses such as Principles of Biotechnological Food Production, Alcohol and Yeast Technology, and Production of Strong Alcoholic Beverages. Laboratory staff actively participate in the delivery of numerous study programmes, from bioprocess engineering to nutrition science.
