Laboratory for Oil and Fat Technology was established in 1957. Interestingly, in the early years, due to the lack of its own premises, classes and exercises were held in the laboratory of the Oil Factory in Zagreb. Throughout history, the Laboratory has been led by Professor Marijan Rac, PhD, Professor Dubravka Štrucelj, PhD, and Professor Desanka Rade, PhD.
The scientific research activity of the Laboratory, under the leadership of Associate Professor Klara Kraljić, PhD, is focused on lipid chemistry and technology. Key areas of work include the biological value of oils, inhibition of autoxidation using antioxidants, the development of modified fats such as margarine, and the development of advanced analytical methods for product authenticity verification.
In recent times, research has been directed toward optimizing the production of unrefined and refined oils of high nutritional value. The Laboratory actively collaborates with the Faculty of Agriculture on the testing of new oilseed crop varieties, as well as on ecologically and economically important projects for the processing of by-products from the oil industry, such as oil cakes and lecithin.
